Kurkuri – Fried Bhindi Recipe is a delicious Indian crispy bhindi recipe which is basically a deep fried dish and also can be served as a snack.
Ingredients :
- Bhindi (Lady Finger) – 250 grams
- Dhania Powder/Coriander Powder -1 teaspoon
- Red Chilli powder – 1/2 teaspoon
- Turmeric powder/Haldi Powder – 1/4 teaspoon
- Jeera or Jeera Powder (Cumin) – 1 teaspoon
- Ajwain – 1/2 teaspoon
- Chaat Masala Powder – 1/2 teaspoon (if you like)
- Asafoetida (heeng) – 1/2 teaspoon
- Salt – to taste
- Gram flour (besan) – 4 tablespoons
- Rice Flour – 2 tablespoon
- Oil – for deep fry
Recipe :
- Firstly wash bhindi into running water, let them dry as much as possible with the help of a kitchen towel.
- Slice vertically into thin strips. If they are long, cut into two horizontally and then slit into long strips and keep in a bowl.
- Now, sprinkle all the spices, besan and of rice flour over the sliced bhindi.
- Finely mix with a spoon or clean hands to coat it evenly.
- Make sure that all the bhindi is evenly coated with the spices, besan and rice flour.
- If required you can add a few drops of water and as well as more besan or rice flour.
- Now heat the oil to fry the bhindi, when the oil is porperly hot then pour a few the hindi to deep fry and keep stirring it on medium heat and get it golden brown.
- Once bhindi is cooked, you will notice that the oil bubbles will start to subside in the pan.
- Now you can remove them with the help of a slotted spoon and place on paper / kitchen towel to soak the excess oil.
These Kurkuri/Fried Bhindi can be served along with Phulka, dal rice and with any other or you can serve it as a snack with Coffee or Masala Chai.
